Apple-Cinnamon Quinoa Porridge


1 cup uncooked quinoa

1⁄2 tsp ground cinnamon

3 cups low-fat milk

1⁄4 cup honey

1 tsp vanilla

2 cups chopped apples


Toast quinoa and cinnamon in a large nonstick saucepan over medium heat 2 to 3 minutes, stirring constantly. Stir in milk, 1 cup water, the honey, vanilla; bring to a boil. Reduce heat to low; cover, and cook 20 to 25 minutes or until quinoa is tender, stirring

occasionally. Top with apples to serve.
